Igbo Delicacies I Miss

Let's call this Part 1.

In today's edition, I will bring to you three foods I ate whilst growing up in an Igbo family.

1. Oka na Ube
This is also known as roasted corn and African pear. This will not be eaten as a meal but as a snack. For years my grandfather will buy fresh (uncooked) ube and wrap it in old newspaper, tuck it somewhere in his suitcase and hand deliver it to me here in London. All the ube needs is a touch of salt once boiled. You can buy fresh corn anywhere and roast it on the barbecue. Tip: The bigger the ube the tastier.

2. Abacha and Ugba 
Abacha is also known as African Salad and it is made with dried shredded cassava and fermented oil bean seeds (Ugba).

3. Nkwobi
This is spicy cow foot. Yummmmmmmmm! I believe the picture speaks for itself. The nkwobi below is also made with ugba.
